Hi, just to butt in - the confusion in how to skip a segment stems from the fact that it's different on the old 3.0 controllers and the newer models. 

Sentry Express 3.0: Press UP button twice.

Sentry Express 4.0: Press the UP arrow (SStP will appear), then press START.

I believe the reason for the difference is that on the 4.0 controller they have added quite a few new useful features as compared to the older model, and they have to find a way to program them. Other things you can do on a newer model is to add hold-time (which I would have found very useful), change the target temperature, set the alarm, and adjust the thermocouple offset.
